Bolted for his/her pleasure/sturdiness! I like this as a desk, but you could dine. We gave it a once-over with natural wax, but adding more layers of polyurethane wouldn't hurt if you want it to be more of a food situation. *Hairpins are always going to have some give, especially with something as heavy as a butcher. Our recommendation is don't dance on it.
